
Ingredients:
* 1 1/2 parts Cognac
* 1 part fresh pineapple juice
* 3/4 part fresh lemon juice
* 1/4 part jalapeno brown sugar (double strength) simple syrup (2:1 sugar/water) - Recipe below
Method:
1. Rim half of a chilled cocktail glass with Sugar In The Raw.
2. Shake all ingredients in a shaker with ice, and strain into the cocktail glass.
3. Garnish with a 2 jalapeno slices and a small pineapple wedge.
To make Jalapeno Syrup:
* 2 cups Sugar In The Raw, brown sugar
* 1 cup water
* 2 fresh jalapeno peppers, washed and stemmed
1. Add the sugar and water to a pot.
2. Slice jalapenos lengthwise and add to a pot.
3. Bring to a boil over medium heat, stirring frequently.
4. Reduce heat to a gentle simmer, and simmer for three minutes.
5. Remove from heat let steep for 20 minutes.
6. Strain through a fine mesh strainer.
